Blueberry Pancakes - Father's Day


It's father's day and the dad in this house loves blueberry pancakes. So first thing this morning I searched my go to cooking site, Cooks Illustrated. Here they are!
Blueberry Pancakes
1 TBSP lemon juice
2 cups milk
2 cups all purpose flour
2 TBSP sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp table salt
1 large egg
3 TBSP unsalted butter - melted and cooled
2 tsp vegetable oil
1 cup fresh blueberries

1. Whisk together lemon juice and milk in large measuring cup; set aside to thicken while preparing other ingredients. Whisk flour, sugar, baking powder, baking soda, and salt in medium bowl to combine.
2. Whisk egg and melted butter into milk until combined. Make well in center of dry ingredients in bowl, pour in milk mixture and whisk very gently until just combined (a few lumps should remain). Do not over mix.
3. Heat 12 inch nonstick skillet over medium heat for 3 to 5 minutes; add 1 teaspoon oil and brush to coat skillet bottom evenly. Pour 1/4 cup batter onto 3 spots on skillet; sprinkle 1 TBSP blueberries over each pancake. Cook pancakes until large bubbles begin to apper, 1 1/2 to 2 minutes. Using thin, wide spatula, flip pancakes and cook until golden brown on second side, 1 to 1 1/2 minutes longer. Serve immediately, and repeat with remaining batter, using remaining vegetable oil only if necessary.

Waffles Anyone?



My son has been talking about making waffles since Mother's Day. We went to brunch at Brick Tops and he ordered waffles. As he declared, "these are the best!" So Friday morning he would not give the " make waffles mommy" a rest. So off to the computer to find a quick and easy recipe. My first stop was Cooks Illustrated but their recipe called for buttermilk powder, and having buttermilk in my fridge but having no buttermilk powder in the baking cabinet, i had to move on. My search ended at allrecipes.com. Here they are.
Waffles I
2 eggs
2 cups flour
1 3/4 cups milk
1/2 cup vegetable oil
1 TBSP sugar
4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla
Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in remaining ingredients until smooth.
Spray waffle iron with non stick cooking spray. Pour about a cup of mix onto how waffle iron. Cook until golden brown. Serve hot.

Sausage Balls



I signed up to provide food for the teacher book fair preview at my son's school. The first thing that came to mind was sausage balls. I have been making these for years. The recipe came to me from a cookbook that one of my friend's mom published. She decided to publish her cookbook Calling Home after her three daughters moved away and constantly called needing recipes. This cookbook has sooo many wonderful recipes and these sausage balls have become a staple in our house! Simple to make and yummy!

Sausage Balls
3 cups bisquick
2 cups shredded sharp cheddar cheese
1 pound sausage - I use Neeses.... there is none better!
1 tsp paprika
Mix by hand or using heavy duty stand mixer. I use the stand mixer and mix the cheese, bisquick, and paprika then add sausage.
Roll into 1 inch balls and bake at 400 for 10 to 12 minutes.
